Choose a format for the product you are making

A fruit name alone does not define a usable ingredient specification. Two strawberry samples may differ in cut, composition, fines, packaging and performance in your process. Start with the finished product and compare samples under the same conditions.

Plain fruit, fruit powders and coated snacks should be evaluated as different products. Confirm the exact composition and intended use of each candidate; do not assume that the documents or storage instructions for one format cover another. Specifications to confirm

A useful sourcing brief names the product, intended channel and destination market, then records the following fields against the selected product:

  • Whole, slice, dice, piece or powder format
  • Piece-size distribution and breakage tolerance
  • Ingredient statement and added ingredients
  • Moisture-related target and packaging barrier
  • Pack format and storage condition
  • Batch and destination-market documentation

Use one sample record for every candidate

An attractive sample is not a complete purchasing specification. Record which product version was accepted, the documents reviewed, unresolved questions and who approved the next step. Confirm how changes to the product, process or packaging will be communicated before a repeat order.
